Brandy Selection
Apple
Over 30 pounds of fresh Golden Delicious apples are cool fermented and distilled for each bottle of our Apple Brandy. The subtle, clean aroma of apple is a perfect match for northern European cuisine.

Apricot
We hand pick tree-ripened apricots at the peak of flavor for this traditional Austrian brandy. The delicate aroma of apricots is beautifully preserved in the spirit, making it one of our favorites to produce and enjoy.

Cherry
A blend of tart Montmorency and rich, dark Bing cherries is used to distill this version of classic ‘Kirschwasser’, a cherry brandy with origins in Germany’s Black Forest. Its unmistakable aroma makes it an important ingredient in Swiss fondue and many chocolate confections.

Grappa
This is our Northwest version of Grappa, the traditional Italian spirit made from the pommace of wine grapes. We use press wine from our red winemaking program to ensure the brandy is smooth and rich, without astringency or bitterness.

Peach
Peaches grown exclusively here on our property make up this delicate specialty brandy. The climate of this region is particularly suited to peaches, and the resulting distillate shows the finesse and softness of the fruit.

Pear
Distilled from ripe Bartlett pears, this classic brandy is often called Poire Williams or Williamsbrand in Europe. Unmistakable aromas of fresh pears and a soft finish make it one of the world’s best loved eau-de-vie brandies.

Plum
Italian prunes are a staple of distilling fine ‘Slivovitz’ in eastern Europe; our adaptation of this classic comes from Estate-grown prunes carefully fermented and distilled into one of our smoothest and richest brandies.

Raspberry
Over 40 pounds of raspberries are needed to distill each bottle of this most rare eau-de-vie. The beautiful aromas of raspberries are focused during distillation, and the resulting spirit is intense and flavorful.
