Brandies
Fine brandy production begins in the orchard, where premium cherries, apricots, raspberries, peaches, plums, apples, pears and grapes are hand-picked at the peak of flavor and ripeness. The fruit is immediately de-seeded, crushed and fermented with a small amount of distiller’s yeast in cool stainless steel tanks, ideally capturing the aroma of each variety.
The resulting fermented mash is then distilled twice in custom-made copper pot stills imported from Germany. The traditional form of the pot still and the skill of the distiller Andy Koenig, who learned his craft at Erber Distillery in the Tyrolean Alps, combine to yield a small amount of pure fruit essence, the Feinbrand, or “fine distillate.” After a minimum aging period of one year in neutral glass carboys, this smooth and aromatic brandy is bottled as luxurious eau-de-vie.
Koenig Distillery produces fine, single fruit eau-de-vie from cherries, apricots, peaches, Italian plums, Williams pears, raspberries, and apples, as well as grappa, the traditional Italian grape brandy. In addition to clear distillates, Koenig Distillery also produces small quantities of aged apply brandy and aged grape brandy in the tradition of Calvados and Cognac. These amber-hued brandies are aged for a period of four to ten years in French oak casks.
Exceptional brandies are best enjoyed as an accompaniment to great food and festive occasions. Eau-de-vie brandy is at its finest when served after dinner in small tulip glasses at room temperature. The delicate fruit aromas and smooth texture of these brandies make them an ideal conclusion to a fine meal or as an enticing ingredient in classic cooking or confections.
